Cranberry Relish for Thanksgiving – use the leftovers for a delicious Cranberry Smoothie

It’s almost Thanksgiving. Do you have your menu set or plans made? I made a Cranberry Relish every year that gets rave reviews. I think it was an old Martha Stewart Recipe. It’s super easy and makes a large amount.

Cranberry Relish
12 oz bag of cranberries – rinsed and coarsely chopped (I make this recipe in my food processor)
1 or 2 oranges chopped (peel removed and discarded)
2 apples chopped (cores and seeds removed and discarded)
Pulse in the food processor until desired consistency, I pulse a couple of short bursts, I like it a bit more chunky.
Add: one can crushed pineapple in its own juice but drained.
One cup sugar
Mix: Stir to mix and chill for at least 2-3 hours. Best if chilled several hours. Make it in the morning for dinner that night.

Now, maybe your guests didn’t eat all your relish – they filled up on other treats. No worries!

Cranberry Yum Smoothie
1 c. cranberry relish
handful of ice
1/2 c. vanilla or greek yogurt
Optional: handful of spinach for that healthy green smoothie – you won’t even taste it!
