Yep, Sweet Potatoes are a superfood. Have you tried sweet potatoes in place of your regular old white potato?
One cup of the orange goodness has twice the vitamin A, fiber and iron as a cup of raw chopped carrots. So if you’re looking for an alternative to taking a baggie of carrots to work to munch on – try this…
If you have access to a microwave at work you can take either of these with you. Otherwise, they’re great at dinnertime.
Sweet Potato French Fries
These are fantastic and super easy.
Wash the sweet potato, peel, and cut into french fry pieces. If you have a food processor with the julienne blade or a mandolin, these will be super fast. Toss with olive oil and sea salt and bake at 450 degrees for 25 to 30 minutes. You can use whatever seasonings you love (paprika, old bay, etc.).
Roasted Sweet Potato
Wash, peel and cut into pieces and roast a sweet potato tossed with a smidge of olive oil, cinnamon (great for lowering blood pressure) and a bit of brown sugar then roast at 350 degrees for about 30 min.
P.S. If you read the post about parsley, sprinkle some chopped parsley on them too for an extra nutritional boost These are great as a medley – use sweet potatoes, white potatoes, turnips and or squash. Try something you haven’t eaten before.
