I’m not ready…

untitled (27)Hope everyone has been enjoying the fresh cherries in season right now. If not, get them quick, they’ll be out of season soon. Since I’ve eaten all my fresh cherries, I’m using tart cherry juice in today’s recipe.

A few of my friends follow the blog but aren’t quite ready to throw greens into their smoothies. So for all of you out there who want to ease in, this one’s for you.untitled (26)

Dip Your Toe in Smoothie

1/2 c. tart cherry juice
1/2 c. greek yogurt (I like Fage 2%)
1 c. pineapple fresh or in its own juice
1 tbsp. chia seeds (optional)
1 tbsp. goji berries (optional)
handful of ice

Blend well and enjoy!

P.S. next time you make it, throw in a few slices of cucumber or a sprig or parsley or a couple pieces of lettuce.

untitled (29)Never tried a Goji berry? Goji berries are filled with powerful antioxidants and rich in vitamin A. They are thought to help with diabetes, high blood pressure, and age-related eye problems.

How about Chia Seeds? Chia seeds are called a “superfood”. The ancient Mayans and Azetcs included them as a staple in their diet and relied on them to boost energy and increase stamina. Today this seed, not the chia pet!, is a favorite of distance runners who swear it enhances endurance.untitled (28)

Chia seeds are full of fiber – 5 grams per tablespoon. You can eat the seeds raw (though you’ll need to rinse or brush your teeth or risk having them stuck in your teeth. Not an attractive look.) They help keep you full since they swell when combined with water or in your tummy. The seeds can be used in oatmeal, to replace eggs in baked goods. One tbsp. replaces one large egg. Sprinkle them on salads, in soups, etc. You can make a gel like pudding as well.

Walking and working…

Any of you have a treadmill desk or tried one? I sit all day and write so I like the concept…though I’m not the most coordinated person. Don’t know if I’d fall off the silly thing. But the idea of walking and clocking a good number of miles each day while working. Well, the healthy part of me stands up and cheers. They are expensive. I know you can make your own but I’m soo not mechanically inclined -grins. Thinking about selling the flat screen to offset the cost. Thoughts?

Pssst, Mother’s day is Sunday

untitled (8)Yep, Mother’s Day is this Sunday.

Sound of things dropping, keys clattering and untitled (11)the door slamming…that’s ok, I’ll still be here when you come back after running out to take care of your mom.

My mom wanted a Kindle so we got her the untitled (9)Paperwhite since it’s backlit (and I adore mine), a cute case and a gift card to start loading it up. She’s a voracious reader as am I and she’s 70. I think it’s cool she uses an iPhone, texts and reads on an eReader. Also, she’s super active, has tons of interests, friends, and activities and enjoys life. And no, she won’t see my blog post 🙂

untitled (10)I can only hope I’m doing as well when I hit her age. Here’s to mom’s everywhere – and you don’t have to be the mom of children. You can be mom to a cat, dog or other pet!

It’s Strawberry Season

images (3)Depending on where you are, it’s strawberry season. Here in the south the roadside stands and pick your own places are open and the farmer’s markets are blanketed in berries. I love fresh strawberries!

As an ode to strawberries, here are some great ways to use them (you know there’s a smoothie in this somewhere right?) – grins.

Strawberry Joy Wicked Green Smoothie

1/2 c. yogurt vanilla or strawberry flavored
1 c. strawberries
1 c. almond milk or juice of your choice
and of course…a handful of greens. If you’re new add a leaf of spinach or lettuce. If you’ve made a few of these use a cup.
Note: the pretty color changes to an ugly color with the greens but it tastes delicious so put it in a dark cup if the color bothers you!

Other ways to enjoy strawberries:

Dipped in dark chocolateth

With yogurt and granola for breakfast or a snack

sliced over your cereal

thCAIPOWBSsimply sliced and eaten, maybe with a pinch of sugar or cool-whip or of course ice-cream

over waffles

Sunshine for your mouth

I know I talk a lot about smoothies but once in a while I have something different. I made a breakfast burrito this morning and yum was it tasty.untitled (3)

Sunshine for your mouth

1 egg (2 if you’re hungry)
1/4 c. shredded cheddar cheese
2 tbsp. salsa
1 whole wheat tortilla

scramble your egg, add to the tortilla and enjoy!

This would also be great with feta and spinach instead of salsa and cheddar. Going to make that one tomorrow.untitled (4)
