No smoothie this time but if you need a holiday treat to take to a party, this one is easy peasy and super delicious!
1 pkg. oreo cookies
1 pkg. 8 oz. cream cheese
1 lb. white chocolate candy coating
Put cookies and cream cheese in food processor Blend until a ball forms. roll dough into 50 balls. Refrigerate at least 2 hours. Melt candy coating, dip balls into chocolate and place on wax paper to dry.
Very rich and delicious!
Are you ready for the holiday next week? Do you need to bring something and have no idea what to make? Or maybe you’re tired of the same old thing? Have no fear, here’s a cranberry relish recipe that is so tasty you’ll want to dish up a bowl and eat it with a spoon.
12 oz bag cranberries, rinsed
1 or 2 oranges peeled and cut in segments (if large orange use 1, I use 2 mandarins or tangerines)
2 apples cut to fit in food processor
put all ingredients into food processor and pulse until desired consistency. I like it chunky so I don’t pulse long.
then add: 1 large can crushed pineapple in its own juice, drained
1 cup sugar
Mix and chill. stir every hour for 2-3 hours. best if chilled for several hours. You can make it the day before
P.S. It’s wonderful the next day as a smoothie base. Use 1/2 cup or 1 cup if you like it more fruity, add 1/2 c. yogurt or OJ, a handful of ice, a handful of spinach and blend – yum!
I recently stumbled across a new cookbook that I had to share with you all. No, you don’t have to be a vegan or vegetarian to enjoy these meals but a few meatless meals won’t hurt -grins. Her book is geared towards using a small crockpot/slow cooker to make small meals for two. I’m not a huge fan of leftovers so this greatly appealed to me. I’ve tried out a few of the recipes so far, easy peasy and super-delicous! So if you’re looking for something new or a holiday gift, this one’s for you.

There are so many ways to enjoy pomegranates. There’s bottled juice by POM. The plain is excellent and the pomegranate/pineapple tastes like Hawaiian Punch to me. I like to add a splash of juice to plain or vanilla greek yogurt. For a refreshing drink, add it to sparkling water with a slice of lime. Delish!
Buying the fruit fresh and squeezing the juice or eating the fruit is…well…like tasting a garden tomato vs a store bought tomato. There’s no comparison. To cut a pomegranate, I cut it into 4 sections and then use my fingers to pop out the seeds over a bowl of water. It’s messy but worth it. Here’s a video to help you.
Let’s not forget fruit itself – the arils or seeds. You can sprinkle them on your cereal, steel cut oats, into your yogurt or my favorite way…eat with a spoon. You can cut and gather the seeds yourself from the pomegranate OR go to the produce section of your store and you’ll see the seeds next to the pomegranate juice. But…they are only available for a short time so get them now!
And let’s not forget our fantastic wicked green smoothie.
1/2 c. frozen blueberries
1/2 c. pomegranate juice or if you’re trying to watch calories use 1/4 c. juice and 1/4 c. water
1/2 c. vanilla or greek yogurt (optional)
handful of kale
couple slices of cucumber or 2 baby carrots (optional) if adding these, leave out the yogurt.
1 tbsp. chia seeds (optional)
Blend well and enjoy!
Have you noticed it’s getting dark earlier and maybe a bit chilly when you wake up in the morning? I adore this time of year when the leaves start to change and you can break out those yummy, cozy sweaters.
So get ready.
Turn down your thermostat to save some $ on your heating bill. Great reason to break out that warm throw or beautiful quilt and wrap yourself up while relaxing in the evenings.
Have your cat or dog sleep with you at night to help keep you toasty.
And…start your day off right. On Sunday, make a batch of steel cut oats for breakfast for the coming week. It’s easy. Use a slow cooker or rice cooker. My rice cooker has a porridge setting. Put in the water and steel cut oats and let them cook. My favorite is McCann’s Irish Oatmeal.
This is not the instant oatmeal you remember as a kid. Steel cut oats have a great flavor and are very filling. I like to add a bit of cinnamon and a few raisins or dried craisins or dried blueberries. Portion out the steel cut oats into your storage containers so all you have to do is grab a container and ziploc snack bag with your toppings (raisins and cinnamon) and you can heat it up at work. For those of you who like milk or almond/soy milk, you can add it to the oats as well – yum! It will keep you satisfied until lunchtime.
